The difference between safflower and saffron is important. Safflower will have slight chocolate notes to its flavor, whereas safflower has a honey flavor. Safflower you need use a tablespoon of product to flavor the same amount as three pestles of saffron. When safflower is used as a coloring, a teaspoon will suffice, compared to the same three pestles of saffron.
